Fresh Melon Oven Puff

  • 2 eggs
  • 3 egg whites
  • 1/2 cup skim milk
  • 1 Tablespoon vanilla extract
  • 1/2 cup all-purpose flour
  • dash of salt
  • 1 Tablespoon fresh lemon juice
  • Confectioners' sugar
  • 2 cups honeydew, diced
  • 2 cups cantaloupe, diced

Preheat oven to 425 degrees. Spray a 10-inch skillet with vegetable oil and place the skillet in the oven. In a large bowl, whisk the eggs, egg whites, milk and vanilla. Add flour and salt and stir to combine. Remove the skillet from the oven. Pour batter into the skillet and bake for 15-20 minutes, until it is puffed and the edges are browned and crisp. Remove from oven, sprinkle with lemon juice and sift over confectioners' sugar to taste. Fill the center with diced melon and serve immediately. Serves 4.
